In his introduction to The country housewife, Richard Bradley states good provisions in many places in England are "murdered" in the making. He promises to "improve the ignorant and remind the learned, how and when to make the best of everything." Along with a bounty of English recipes, his book suggests seasonal ingredients for each month of the year, and highlights little known or "unappreciated" garden produce, such as skirrets, scorzonera, and salsify.
