Antoine Augustin Parmentier

Antoine Augustin Parmentier (1737–1813), a French scientist and agronomist, promoted the consumption of potatoes in Europe before they were widely considered safe for eating. His other contributions to health and nutrition included establishing the first mandatory smallpox vaccination campaign (when he was inspector-general of the health service under Napoleon), and pioneering the extraction of sugar from sugar beets.
